Meet the Food Network Star contestant from St. Louis

ST. LOUIS, MO (KPLR) - The Food Network competition series Food network star returns for an 11th season this Sunday, with a cast of twelve talented hopefuls competing to become the next new face in food television.   One of the contestants is from right here in St. Louis. Christina Fitzgerald is taking on the challenge and metro is definitely cheering her on!

RECIPE - Tuna Crudo with Avocado Crema

Sushi grade yellow fin tuna
1 Avocado
The juice of 1 lime
½ c Rainbow quinoa (cooled)
Radish (sliced thin with a mandolin)
Mango (small diced)
Kale sprouts
Serrano pepper (seeded and sliced into thin rounds)
Good olive oil (cold pressed)
Finishing salt


Put avocado and lime juice into a food processor and puree until smooth. Season with salt to taste. Rinse quinoa until water runs clear. Measure ½ cup of quinoa and 1 cup of water into a medium sauce pan. Bring to a boil, reduce to a simmer and cover for 20 minutes until tender. Using a very sharp knife and long fluid strokes, slice the tuna at an angle. Brush the fish with olive oil and season with salt. Place a smear of the avocado onto the plate. Next, spoon some cooled quinoa on top. Place the fish on top of the quinoa and garnish with the remaining ingredients. Serve immediately.
