Farm to Fork tasting event at Rooftop 360

(KPLR)- The holiday eating season is upon us and there's an event this weekend where food and wine lovers can sample some of the best local seasonal cheeses, meats, produce, wines and beers.
Chef Rex Hale from Rooftop 360" stops by to tell us about the Farm to Fork tasting event.

Farm to Fork is from 6:30p.m. until 8:30p.m. on Friday, November 7th at the Rooftop 360.

Tickets are $40 and include unlimited wine, beer and food.

Chef Hale also provided a cooking demonstration.

Cooking demo: Arugula salad w/ Local apples & Baetje Farms goat cheese

o   5 ounces baby arugula

o   5 ounces mesclun mix

o   4 ounces toasted   whole walnuts or Missouri pecans

o   2 ounces Baetje Farms fresh   goat cheese

o   2 ounces   dried apples (recipe to follow)

o   2 ounces   local apples thinly sliced

o   5 ounces Honey vinaigrette (recipe to follow)

Dried Apples:

Slice Apples thin then dip in a solution of one cup warm water and one cup sugar.  Arrange on a nonstick mat and bake at 200 degrees for 30 to 45 minutes until dry.

Honey Vinaigrette:

o   2ounces white balsamic

o   6ounces extra virgin olive oil

o   1 teaspoon   honey

o   1 teaspoon Dijon Mustard

o   1 teaspoon minced garlic

o   Salt and pepper to taste

Place all ingredients in a blender and slowly add oil until emulsified.

Toss all ingredients except dried apples and goat cheese in a mixing bowl.  Arrange on four plates garnish with goat cheese and dried apples.
