(KPLR) – Summer snacks can heat up the kitchen. Even with our cooler weather the last week, you might to keep the kitchen from heating up, so Josh Allen from Companion brought some "cool" dishes.
Pan Con Tomate (Bread with Tomato)
1 large ripe summer tomato
4 thick slices Companion Pain Beaucaire
1/4 cup extra virgin olive oil
1 large garlic clove, peeled and cut in half
Toast the bread slices on medium-dark setting until well browned and crisp. While still warm, rub the bread slices with the cut side of the garlic halves until fragrant. Cut the stem side off of the tomato. Over a bowl, grate the cut side of the tomato on the largest holes of a box grater. Discard skin. Using a spoon, evenly distribute the tomato mixture over the toasted bread. Generously drizzle with olive oil, sprinkle with sea salt and enjoy immediately!
